Buddha Jumps Over the Wall, also known as Fúshòuquán, is a signature dish from Fuzhou, Fujian Province, belonging to the Min cuisine. Legend has it that this dish was created by Zheng Chunfa, the owner of the Juchun Garden restaurant in Fuzhou during the Daoguang era of the Qing Dynasty. According to Mr. Fei Xiaotong’s records, the inventor of this dish was actually a group of beggars. Buddha Jumps Over the Wall typically includes ingredients such as abalone, sea cucumber, fish lip, yak skin gelatin, king oyster mushroom, tendon, flower mushroom, cuttlefish, dried scallop, and quail eggs.
